For the Usal

For Serving

  • 2 Pav Rolls soft bread rolls
  • 1 small Onion for serving, thinly sliced
  • 2 tbsp Butter for toasting pav

Instructions
 

Prepare the Usal

  • Heat oil in a pan. Add black mustard seeds and let them crackle.
  • Add finely chopped onions and saute for 1 minute until translucent.
  • Add ginger-garlic paste, red chili powder, turmeric powder, garam masala, and salt. Saute for 3-4 minutes until fragrant.
  • Add chopped tomatoes and mix well. Cook for another 2 minutes until slightly softened.
  • Add sprouted moong dal and 1 cup of water. Bring to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes, or until the moong dal is tender.
  • Stir in lemon juice and remove from heat. Garnish with chopped coriander leaves.

Toast the Pav

  • Lightly butter the pav rolls.
  • Heat a griddle or flat pan over medium heat. Place the pav rolls on the hot surface and toast for 1-2 minutes per side, until lightly golden brown and warmed through.

Serve

  • Serve the hot Usal immediately with the toasted pav rolls and a side of thinly sliced raw onions.

  • For a richer flavor, soak the moong dal for a few hours before cooking, or even overnight.
