Ingredients
Soaking Ingredients
- 1 cup Rice
- 3 cup Rice parboiled
- 1/2 cup Sago Pearls sabudana/javarrisi
- 1 cup Gram black
Other Ingredients
- 1 cup Rice flattened, beaten rice flakes
- Salt to taste
- 1/4 tsp Baking Soda optional
Instructions
- Wash the sago pearls, rice, parboiled rice, and urad dal thoroughly. Soak the sago separately in enough water for 5 hours. Soak the rice, parboiled rice, and urad dal together in a separate bowl with enough water for 4 hours. This allows for even hydration and proper fermentation.
- Just before grinding, wash the poha and set aside. Drain the excess water from the soaked sago, rice, parboiled rice, and urad dal.
- Combine the drained sago, rice, parboiled rice, urad dal, and poha in a blender. Add salt and enough water to create a smooth batter. Blend until completely smooth. If you have a large quantity of ingredients, grind in batches for a smoother consistency.
- Transfer the batter to a large container, leaving enough room for fermentation. Cover and let it ferment for 8-10 hours, or until light and airy. Fermentation time may vary depending on the temperature and humidity.
- Lightly grease flat plates or a thatte idli pan with oil. Just before steaming, gently stir the baking soda into the fermented batter. This helps create light and fluffy idlis.
- Pour a thin layer of batter onto the greased plates. Steam for 15 minutes in a steamer, rice cooker, or idli cooker. Steaming ensures even cooking and a soft texture.
- After 15 minutes, turn off the heat and let the idlis rest for 5 minutes. This prevents them from sticking. Carefully remove the thatte idlis from the plates using a sharp, wet spoon or knife.
