  • 1 lb Chicken Breast boneless, cut into 1-inch bite-sized pieces, skinless
  • 2 Potato peeled and cut into 1-inch cubes
  • 1 cup Bamboo Shoot drained and thinly sliced

Prepare the Chicken and Vegetables

  • Heat olive oil in a large pan or wok over medium heat. Add onion paste and stir-fry for 1 minute until fragrant. Add ginger-garlic paste and stir-fry for another 2 minutes.
  • Add the potatoes and chicken. Stir well to coat with the paste and cook for 5-7 minutes until lightly browned.

Add Aromatics and Spices

  • Stir in the shredded bamboo shoots, kaffir lime leaves, fish sauce, paprika, white pepper, and sugar. Cook for 2-3 minutes, stirring frequently, until fragrant and slightly softened.

Simmer the Curry

  • Pour in the coconut milk and water. Bring to a gentle simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until the chicken is cooked through and the potatoes are tender. Stir occasionally to prevent sticking.

Garnish and Serve

  • Stir in the chopped fresh coriander. Garnish with crushed peanuts and chopped spring onions. Serve hot with steamed rice or noodles.
