Ingredients
- 2 cup Coconut fresh, grated
- 3.5 cup Water
- 3 tbsp Kokum Juice thick, then strain, unsweetened; soak 3 tablespoons of kokum pieces in 1/4 cup water for 30 minutes
- 1/4 tsp Jaggery
- 1.5 tsp Salt
- 1 Chili chopped, green
- 1 leaf Coriander chopped
- 2 clove Garlic
- 1/4 tsp Mustard Seeds
- 1/4 tsp Cumin Seeds
- 3 leaves Curry Leaves
- 1/2 tsp Asafoetida also known as hing
- 1 tsp Oil
Instructions
Prepare the Coconut Milk
- Blend grated coconut, green chili, coriander, and garlic with 1 cup of warm water until a smooth, thick paste forms. Add more warm water if needed to reach desired consistency.
- Strain the mixture through a fine-mesh sieve or cheesecloth, pressing firmly to extract all the coconut milk. Repeat this process with the remaining coconut pulp, adding 1.5 cups of warm water.
Combine the Ingredients
- In a large bowl, combine the strained coconut milk, kokum juice, jaggery (or brown sugar), and salt. Stir until the jaggery is completely dissolved.
Make the Tempering
- Heat oil in a small pan over medium heat. Add mustard seeds and cumin seeds; allow them to splutter.
- Add curry leaves and asafoetida (hing). Stir briefly to combine.
Finish and Serve
- Carefully pour the tempering over the Sol Kadhi mixture. Gently stir to combine. Chill thoroughly in the refrigerator before serving. Enjoy chilled as a refreshing drink or alongside a meal.
