- Bring 1 kg of full-fat milk to a rolling boil in a heavy-bottomed pot. Once boiling, immediately add 3 tablespoons of white vinegar and stir gently.
Curdling the Milk
- The milk will begin to curdle. Turn off the heat and let it sit for 2 minutes undisturbed.
Draining the Whey
- Line a colander with a cheesecloth and place it over a large bowl. Gently pour the curdled milk into the cheesecloth to separate the chenna (curds) from the whey (liquid).
Rinsing and Draining the Chenna
- Rinse the chenna under cold running water to remove any excess vinegar. Gather the corners of the cheesecloth and tie it securely. Hang it for 20 minutes to allow excess water to drain completely.
Preparing the Rasgulla Balls
- Once drained, gently knead the chenna until smooth. Roll the chenna into small, uniform balls (about 1 inch in diameter). Set aside.
Making the Sugar Syrup
- In a pressure cooker, bring 1 cup of sugar and 1/2 cup of water to a boil. Add 4 lightly crushed green cardamom pods.
Cooking the Rasgullas
- Carefully add the chenna balls to the boiling sugar syrup. Close the lid of the pressure cooker and cook on medium heat until one whistle blows. Reduce heat to low and cook for another 5 minutes.
Finishing and Cooling
- Turn off the heat and allow the pressure to release naturally. Open the lid and gently remove the Rasgullas. Return the sugar syrup to the stove and simmer until it slightly thickens. Add the cooked Rasgullas back to the syrup and let it cool completely. Refrigerate for at least 2 hours before serving to allow the Rasgullas to absorb the syrup and become even more flavorful and tender.
