Ingredients
Dry Ingredients
- 1 cup Semolina Flour also known as suji or rava
- 1 1/4 cup All-Purpose Flour refined flour
- 1 cup Sugar powdered
- 1 cup Milk Powder
- 1/2 tsp Baking Powder
- 1/2 tsp Active Yeast dry
- 1 tsp Salt
Wet Ingredients
- 1/2 cup Vegetable Oil
- 1 tbsp Ghee clarified butter
- 1/2 cup Water lukewarm
- 1 tsp Vanilla Extract
- 1/2 tsp Sugar for activating yeast, granulated
Instructions
Prepare the Dough
- Combine semolina flour, oil, and ghee in a bowl. Mix well and cover; let it rest overnight.
Activate Yeast
- In a small bowl, combine lukewarm water, granulated sugar, and active dry yeast. Let stand until foamy (about 5-10 minutes).
Combine Ingredients
- In a large bowl, combine the rested semolina mixture, all-purpose flour, powdered sugar, milk powder, baking powder, salt, and vanilla extract. Gradually add the activated yeast mixture and mix until a soft, pliable dough forms. Knead for 5-7 minutes until smooth.
Prepare the Filling
- In a separate bowl, combine the mixed dried fruits, chopped figs, and chopped dates. Mix well.
Shape the Cookies
- Let the dough rest for about an hour. Form small balls of dough, slightly larger than walnut-sized. Flatten each ball, place a small amount of filling in the center, and carefully shape into a ball again. Traditionally, Mamoul are made using a special mamoul mold, but you can also shape them into small balls or ovals.
Bake the Cookies
- Preheat your oven to 350°F (175°C). Place the cookies on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until lightly golden brown.
Cool and Serve
- Let the cookies cool completely on a wire rack before serving. Enjoy!
