Ingredients
Sabudana Preparation
- 1 cup Tapioca Pearl sago, soak in water for at least 4 hours, or overnight for best results.
Vegetables & Spices
- 2 medium Potatoes boiled, and mashed, peeled
- 1 large Onion finely chopped
- 6 pod Garlic
- 1 Chili finely chopped (adjust to your spice preference), green
- 1 tbsp Cumin Seeds
- 1 tsp Cumin Powder jeera
- 1/3 cup Peanuts dry roasted
- 1/2 tsp Chili Powder red
- 1/2 tsp Turmeric Powder haldi
- 1.5 tsp Salt or to taste
Optional Garnish
- Coriander finely chopped, to taste, for garnish
Instructions
Prepare the Sabudana
- Soak the sabudana in ample water for at least 4 hours, or preferably overnight.
Roast and Grind Spices
- Dry roast the peanuts and garlic for 2 minutes until fragrant. Allow to cool slightly, then grind into a coarse powder using a spice grinder or blender.
Combine Ingredients
- In a large bowl, gently combine the soaked and drained sabudana, mashed potatoes, chopped onion, green chili, roasted peanut-garlic powder, cumin seeds, cumin powder, red chili powder, turmeric powder, and salt. Mix well until a smooth, cohesive dough forms.
Shape and Cook the Appe
- Form the mixture into small, lemon-sized balls. Heat your appe pan (or a non-stick pan) over medium heat. Place the sabudana balls onto the hot pan and cook, flattening them slightly with a spatula. Cook for 2-3 minutes per side, or until golden brown and crispy.
