Ingredients
 

Chickpeas

  • 2 cup Chickpea can use canned, or soak 1 cup dried chickpeas overnight, then boil until tender. reserve cooking liquid.

Aromatics & Spices

Other Ingredients

  • 2 tbsp Oil vegetable or mustard oil
  • 2 Bay Leaf
  • 2 Chili (broken into pieces), dry, red
  • 1 tbsp Lime Juice freshly squeezed
  • Salt to taste Salt

Instructions
 

Prepare the Chickpeas

  • Wash and clean canned chickpeas thoroughly. Alternatively, soak dried chickpeas overnight and boil until tender. Reserve the cooking liquid.

Sauté Aromatics

  • Heat oil in a pan or pot. Add cumin seeds, bay leaves, and dry red chilies. Sauté until fragrant.

Cook the Onion and Tomato

  • Add the chopped onion and sauté until lightly browned. Add the chopped tomato and cook until it becomes soft and mushy.

Add Spices and Puree

  • Stir in the ginger-garlic paste, chili paste (optional), turmeric powder, garam masala, chole masala, red chili powder, and anardana powder. Cook for about a minute, stirring constantly, until fragrant.

Combine and Simmer

  • Add the tomato puree and chickpeas. Pour in enough water or reserved chickpea liquid to create a desired consistency. Bring to a simmer, then reduce heat to low.

Add Fenugreek and Finish

  • Stir in the chopped fenugreek leaves. Simmer on low heat for at least 20 minutes, or longer for a richer flavor, stirring occasionally. The sauce should thicken nicely.

Serve

  • Season with salt to taste. Stir in lime juice just before serving. Serve hot with roti, naan, or puris, garnished with fried green chilies and onion slices.
