Wash and cut spring onions. Cut the leafy part separately and the onion bulb separately. Cut potatoes like you would cut for french fries.
Heat oil in a pan. Add kalongi and garlic cloves, after 30 secs add white part of the onion. Saute it and add the potatoes.
Fry them for a minute and then add green part.
Add green chillies, salt to taste, turmeric powder, red chilli powder and let it cook on sim flame for about 10-15 mins. Check the potatoes to make sure it is properly cooked.
Serve this crunchy sabzi with paratha. It tastes different and yummy and adds variety to the regular sabzis we eat.
