What Is Your Signature Dish?

Everyone who cooks, has a signature dish. A dish which they can cook well, a dish which always turns out good! A dish which can be prepared effortlessly and which does not let you down, a dish which can be stirred and served to guests, a dish which needs no written down recipe.

 I checked the actual meaning of ‘signature dish’ and the following was listed in Wikipedia: A signature dish is a recipe that identifies an individual chef. Ideally it should be unique and allow an informed gastronome to name the chef in a blind tasting. It can be thought of as the culinary equivalent of an artist finding their own style, or an author finding their own voice. Indeed cooking is equivalent to art – of an artist finding their own style, or an author finding their own voice.

Very aptly described and how true!

When I was in college, coriander pulao was introduced by my elder sister, Lakshmi to my mother. My mother, in turn would make this dish on special Sundays and we all loved it. We were in love with this tasty dish. Later I learnt to make this dish from my mother and continued to make this dish with some adaptations. I always cook this dish on Sundays, for dinner. It has become a tradition!

Even my mother in law who prefers dishes without garam masala, likes this pulao. I think, coriander pulao is my signature dish. What is your signature dish? I am very much excited and curious to know. Please share your signature dish.
