  • Quarter the apples and remove the seeds. This ensures a smooth juice.
  • In a blender, combine the quartered apples and water. Blend until a smooth purée forms.
  • Strain the apple purée through a fine-mesh sieve into a saucepan. This removes any solids and creates a clear juice.
  • Place the saucepan over low heat. Add the cinnamon stick, cardamom, cloves, nutmeg, and star anise. Cover the saucepan.
  • Simmer gently for 15-20 minutes, or until the apple juice is fragrant with spices. Low heat allows the spices to infuse the juice without bitterness.
  • Strain the spiced apple juice through a fine-mesh sieve into a heatproof pitcher or serving container. This removes the whole spices.
