Preheat & Prep

Combine Dry Ingredients

Combine Wet Ingredients

  • In a separate bowl, dissolve instant coffee powder in warm water. Add vegetable oil, lemon juice, and vanilla extract to the coffee mixture and whisk to combine.

Combine Wet & Dry

  • Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix.

Bake the Cake

  • Pour batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Chill the Cake

  • Let the cake cool completely in the pan before wrapping it tightly in plastic wrap and refrigerating for at least 1 hour, or up to overnight. This step is crucial for easier layering and prevents the cake from crumbling.
