  • Heat oil in a pan, add chopped onions. Stir until they become golden.
  • Now add carrot, minced garlic, celery and sautรฉ it for 5 to 7 minutes.
  • Add vegetable stock and bring it to boil. Now add squash, beans, corn kernels and thyme.
  • Cover and simmer it for 7-8 minutes. Stir occasionally.
  • Add salt and pepper and serve hot with any bread.
