  • ½ cup Corn kernels frozen
  • ½ cup Beans boiled, you can use any beans. I used rajma
  • ½ cup Squash diced, cooked
  • 1 tbsp Olive Oil
  • ¼ cup Carrot diced
  • ½ tsp Garlic minced
  • 1 Onion small chopped
  • ½ rib Celery diced
  • ½ tsp Thyme
  • Salt to taste
  • Black pepper powder as required
  • 2 cup Vegetable stock

  • Heat oil in a pan, add chopped onions. Stir until they become golden.
  • Now add carrot, minced garlic, celery and sauté it for 5 to 7 minutes.
  • Add vegetable stock and bring it to boil. Now add squash, beans, corn kernels and thyme.
  • Cover and simmer it for 7-8 minutes. Stir occasionally.
  • Add salt and pepper and serve hot with any bread.
