Ingredients
- ยฝ cup Corn kernels frozen
- ยฝ cup Beans boiled, you can use any beans. I used rajma
- ยฝ cup Squash diced, cooked
- 1 tbsp Olive Oil
- ยผ cup Carrot diced
- ยฝ tsp Garlic minced
- 1 Onion small chopped
- ยฝ rib Celery diced
- ยฝ tsp Thyme
- Salt to taste
- Black pepper powder as required
- 2 cup Vegetable stock

Instructions
- Heat oil in a pan, add chopped onions. Stir until they become golden.
- Now add carrot, minced garlic, celery and sautรฉ it for 5 to 7 minutes.
- Add vegetable stock and bring it to boil. Now add squash, beans, corn kernels and thyme.
- Cover and simmer it for 7-8 minutes. Stir occasionally.
- Add salt and pepper and serve hot with any bread.
