Ingredients
For the Rice
- 2 cup Basmati Rice cooked and steamed
For the Tomato Masala
- 3 tbsp Vegetable Oil
- 1 pinch Asafoetida hing
- 1 medium Onion finely chopped
- 1 Chili finely chopped (adjust to taste), green
- 5-7 leaves Curry Leaves
- 1 tsp Ginger-Garlic Paste
- 3 large Tomatoes finely chopped
- 1 tsp Chili Powder adjust to taste, red
- 1/2 tsp Turmeric Powder haldi
- 1/4 tsp Garam Masala
- 1/2 tsp Salt or to taste
- 3 medium Potatoes cut into small pieces
- 1/4 cup Coriander finely chopped, for garnish and cooking
Instructions
Prepare the Tomato Masala
- Heat oil in a wok or large pan. Add asafoetida and sauté for a few seconds until fragrant. Add curry leaves and sauté until they splutter.
- Add finely chopped onions and sauté until lightly browned. Add ginger-garlic paste and sauté for 2 minutes on low flame.
- Add chopped tomatoes and cook on low flame for 3-4 minutes until softened. Add green chilies, a portion of the chopped coriander, red chili powder, turmeric powder, and garam masala. Cook until the oil separates from the masala.
- Add the potatoes and cook until tender, adding a little water if needed. Once potatoes are cooked, stir in the cooked rice and mix well. Garnish with the remaining fresh coriander.
