Ingredients
For the Rice
- 3 cup Rice cooked
For the Tempering
- 1 tbsp Oil
- 1 tsp Mustard Seeds
- 2 tsp Chickpea split chickpeas
- 2 tsp Lentils black, split black lentils
- 1 tbsp Peanuts roasted
- 1 Chili Pepper chopped, green
- 10 leaves Curry Leaves
Instructions
- Heat the oil in a pan over medium heat. This will create the tempering, which infuses the dish with flavor.
- Add the mustard seeds to the hot oil and let them splutter. This releases their aromatic oils.
- Add the chana dal, urad dal, and peanuts to the pan. Sauté until they turn lightly golden and fragrant.
- Add the chopped green chili and curry leaves. Sauté for another minute until the curry leaves become crisp.
- Stir in the grated raw mango and mix well. This adds a tangy kick to the dish.
- Gently fold in the cooked rice, sugar, and salt. Mix thoroughly to combine all the ingredients.
- Cover the pan and cook for a few minutes to allow the flavors to meld. This also helps the rice absorb the tempering and mango flavors.
- Serve the Tangy Mango Rice warm and enjoy its refreshing taste.
Recipe Notes
Good To Know
- For maximum flavor and the right texture, use slightly underripe (firm) mangoes, which provide the ideal tang and won't turn mushy when mixed with the rice.
- To enhance crunch and fragrance, roast the peanuts separately until golden and add them at the end, just before serving, so they retain their crispness.
- If preparing ahead, keep the grated mango separate and add it to the rice just before serving to maintain its fresh, zesty bite and prevent the dish from becoming soggy.
- For an extra burst of color and subtle sweetness, toss in a handful of pomegranate seeds or finely chopped fresh coriander as a garnish before serving.
Expert Tips
- Adjust the amount of chili to your preference for a milder or spicier mango rice.
- For a richer flavor, use coconut milk instead of water when cooking the rice.
- Toasting the coconut flakes before adding them enhances their flavor and adds a delightful crunch.
Storage Instructions
- Store leftover mango rice in an airtight container in the refrigerator for up to 3 days.
- Garnish with fresh peanuts and herbs just before serving.
