Tamil Arusuvai Maanga Pachdi Or Instant Raw Mango Raitha

Happy Tamil New Year to you and your family 🙏 Six tastes of food are sweet, sour, salty, bitter, pungent and astringent. It is called as Arusuvai in Tamil. Today on Tamil New Year, Maanga Pachdi is the main dish which we prepare in home along with other dishes like payasam, wadas, sambar, rice and curd Raitha. Maanga Pachdi or instant raw Mango jam/ raitha is a mixture of six tastes and consists of Jaggery, Neem flower, red chilli, Salt, turmeric and Raw Mango. It is in-taken first on the New year to represent the acceptance of different emotions(Happiness, Sorrow, Anger, Fear, Disgust and Surprise) in an equal manner. This Raitha is specially made in summers for better immunity and to fight from heat and falling sick due to changing climate.

Ingredients
  

  • Maanga Pachdi/ Instant Mango Raitha;
  • Raw mangoes 3 nos.
  • Gur powder 1/4 cup
  • Salt
  • Red chilli powder to taste
  • Jeera powder 1/2 tsp
  • Ghee 1 tsp
  • Mustard seeds 1 tsp
  • Fenugreek seeds 1/2 tsp
  • Pinch asafoetida
  • Pinch of turmeric
  • Few Neem flowers

Instructions
 

  • Wash and peel mangoes. Chop them in any shapes. I cut them into long random shapes. Not too small and not too big.
  • In a small pan, heat ghee add mustard seeds and fenugreek seeds. Then add Asafoetida and add chopped mangoes and sauté.
  • Add red chilli, jeera, turmeric and sauté. Now add water till mangoes are submerged.
  • Cover and cook till mangoes are tender. Then add powdered gur and mix well. Sprinkle Neem flowers.

Notes

This jam pickle or Raitha whatever you may call, compliments well with curd rice, chapatis, puri’s or can be had as a side dish with a full course meal.
