Ingredients
Bitter Gourd Preparation
- 4 Bitter Gourd karela, medium-sized
Spice Paste
- 6 clove Garlic
- 1 tbsp Mustard Seeds yellow or white mustard seeds
- 0.5 tsp Turmeric Powder haldi
- 1.5 tsp Salt or to taste
Oil & Other
- 2 tbsp Mustard Oil
- 1 tbsp Mustard Seeds black
- 1 cup Water for boiling bitter gourd
Instructions
Prepare the Bitter Gourd
- Slit each bitter gourd lengthwise, creating a pocket for the stuffing. Boil one cup of water. Once boiling, add the bitter gourd and boil for 2 minutes. Remove, cool slightly, and scoop out the seeds.
Make the Spice Paste
- In a mortar and pestle (or using a food processor), grind the garlic and mustard seeds into a fine paste. Finely chop the onion and green chilies.
Sauté and Stuff
- Heat 1/2 tablespoon of mustard oil in a pan. Sauté the chopped onions until lightly browned. Add the garlic-mustard paste, chopped green chilies, turmeric powder, and salt. Fry until a dry, fragrant paste forms. This is your stuffing. Spoon the paste into the bitter gourd pockets.
Fry the Stuffed Gourd
- Heat the remaining mustard oil in the same pan. Carefully place the stuffed bitter gourd in the pan and fry over medium heat until lightly browned on all sides. Be careful not to overcook.
