Ingredients
For the Ivy Gourd
- 15-20 Ivy Gourd tindora
For the Spice Paste
- 1 tsp Chili Powder red
- 1 tsp Turmeric Powder
- 2 tsp Coriander Powder
- 0.5 tsp Garam Masala
- 1 tsp Dry Mango Powder dried mango powder
- 1-2 tsp Salt to taste
- 2-3 tbsp Water for spice paste
For Frying
- 0.5 tsp Mustard Seeds
- 0.5 tsp Cumin Seeds
- 1.5 tbsp Oil vegetable or coconut oil
For Garnish
- 2 tbsp Coriander chopped
Instructions
Prepare the Ivy Gourd
- Wash the ivy gourds thoroughly. Make a lengthwise slit on one side of each gourd. Microwave the gourds with 1/4 cup of water on high for 5-6 minutes to slightly soften them.
Make the Spice Paste
- In a small bowl, combine red chili powder, turmeric powder, coriander powder, garam masala, amchur powder, and salt. Gradually add 2-3 tablespoons of water, mixing until a smooth, thick paste forms.
Stuff the Ivy Gourds
- Carefully stuff the spice paste into the slit of each ivy gourd. Repeat until all gourds are filled.
Sauté the Spices
- Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds; let them sizzle until the mustard seeds begin to pop.
Fry the Stuffed Ivy Gourds
- Add the stuffed ivy gourds to the pan. Since they've been microwaved, they won't require extensive frying. Fry for 8-10 minutes, turning occasionally, until heated through and slightly browned.
Garnish and Serve
- Remove from heat and garnish with fresh cilantro. Serve hot as a side dish or part of a larger meal.
