Ingredients
Vegetables
- 2 Cucumbers finely chopped
- 2 Bell Peppers finely chopped, red
- 2 Large Onions finely chopped
Marinade
- 1 cup Sugar
- 1 cup Vinegar white
- 1 tsp Pepper black, ground
- 1 tsp Turmeric Powder haldi
- 1 tsp Celery Seed
- 1 tsp Mustard Seeds
- 2-4 tsp Salt or to taste
Other
- 1 cup Water cold
Instructions
Prepare the Vegetables
- Finely chop the cucumbers, red bell peppers, and onions. In a large bowl, combine the chopped vegetables and soak them in cold salted water for at least 3 hours, or preferably overnight, to remove excess moisture and make them crisper.
Drain and Rinse
- After soaking, thoroughly drain the vegetables and rinse them under cold water. Squeeze out any excess water using a clean kitchen towel or cheesecloth.
Make the Marinade
- In a saucepan, combine the sugar, vinegar, black pepper, turmeric powder, celery seed, and mustard seeds. Bring the mixture to a boil over medium heat, stirring constantly until the sugar dissolves completely.
Combine and Simmer
- Add the drained vegetables to the boiling marinade. Reduce heat to low, cover the saucepan, and simmer for 30 minutes, stirring occasionally to prevent sticking. The vegetables should be tender-crisp.
Cool and Store
- Remove the saucepan from the heat and let the relish cool completely. Once cooled, transfer the relish to airtight jars or containers. Store in the refrigerator for up to 2 weeks.
