  • 1/2 cup Lentils black, organic whole is preferred, split black lentils
  • 1/2 cup Oats instant
  • 1.5 tsp Salt adjust to taste
  • Water Water add enough water to create a smooth, pourable batter. the amount will depend on the type of rice and oats used.

For the Filling

  • 1/2 cup Carrot finely chopped
  • 1/2 cup Tomato finely chopped
  • 1/2 cup Onion finely chopped
  • 1/2 cup Cucumber finely sliced or diced
  • 1/4 cup Chili Pepper adjust to your spice preference), finely chopped (optional, green

Instructions
 

Prepare the Batter

  • Wash the rice and urad dal separately and soak for at least 6 hours, or preferably overnight. Drain well and grind into a smooth batter using a blender or food processor. Add the instant oats and blend until a smooth consistency is achieved. Stir in the salt and let the batter ferment overnight.

Cook the Uttapams

  • The next morning, heat a lightly oiled non-stick pan or griddle over medium heat. Pour 1/4 cup of batter onto the hot pan for each uttapam, spreading it into a thin, round circle. Sprinkle the chopped vegetables evenly over the top.

Finish and Assemble

  • Cook until the edges are golden brown and crisp, and the vegetables are tender. Flip carefully and cook the other side until golden brown. Remove from the pan and let cool slightly.

Make the Sandwiches
