Ingredients
For the Makki Ki Roti Tacos
- 2 cup Makki Ka Atta maize flour
- 1/4 cup All-Purpose Flour maida
- 1/4 cup Coriander chopped, finely
- 1 1/2 tsp Salt or to taste
- 2 tsp Oil
For the Sarson Ka Saag
- 100 gm Mustard Greens
- 100 gm Spinach
- 2-3 Chilies green
- 2 tsp Ginger-Garlic Paste
- 100 gm Cottage Cheese indian cottage cheese, cubed
- 1 tsp Turmeric Powder haldi
- 1 tsp Chili Powder red
- 1 tsp Garam Masala
- 1 tsp Cumin Seeds jeera
- 1 tbsp Oil
- Salt to taste
For the Garnish
- Tomatoes as needed, chopped, finely
- Cottage Cheese as needed, grated
Instructions
- In a large bowl, combine the makki ka atta, all-purpose flour, chopped cilantro, salt, and oil. Mix well. Gradually add warm water until a firm dough forms. Knead for 5-7 minutes until smooth. Cover and let rest for 10 minutes. This allows the gluten to relax, resulting in softer rotis.
- Divide the dough into small, equal-sized balls. Roll each ball into a thin disc using a rolling pin. Heat a flat griddle or tawa over medium heat. Cook each roti for 1-2 minutes per side, or until golden brown spots appear. To create the taco shape, gently fold the hot roti in half while it's still on the tawa.
- Thoroughly wash the mustard greens and spinach. In a large pot, bring water to a boil. Add the greens and cook for 8-10 minutes until tender. Immediately transfer the cooked greens to a bowl of ice water. This stops the cooking process and helps retain the vibrant green color.
- After 5 minutes, drain the greens and blend them with the green chilies until a smooth paste forms. Set aside.
- Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle. Add ginger-garlic paste and sauté for 2 minutes until fragrant. Add the cubed paneer and cook until lightly browned. Stir in the turmeric powder, red chili powder, garam masala, and salt. Cook for 1 minute.
- Add the blended greens paste to the pan. Simmer for 3-4 minutes, allowing the flavors to meld. Adjust salt if needed.
- Fill each makki ki roti taco shell with the prepared sarson ka saag. Top with chopped tomatoes and grated paneer. Serve immediately and enjoy this delicious fusion creation!
