Rajma is one of the most popular curry of North India. Punjabi ‘s all time favorite curry. It is made with whole kidney beans.
200 gm Red kidney beans (rajma)
8-10 garlic cloves
1 inch ginger
2-3 green chillies finely chopped
1/2 tsp red chilli powder
1 tsp coriander powder
1/2 tsp Garam Masala
1 bay leaf
1 - 2 cardamom
Salt to taste
Oil for cooking
Coriander sprigs for garnish
Wash and soak rajma in water for overnight or 7-8 hours. Add salt and enough water in rajma NC pressure cook it until 6-7 whistles or until cooked.
Boil onion, garlic and ginger in a pan. Once cooled grind in a smooth paste. Grind tomatoes and green chillies separately.
Heat oil in a Kadhai. Add bay leaf & cardamom. Saute it. Pour onion paste. Saute until it leaves oil and golden brown.
Add tomatoes puree. Saute it until masala separates oil. Add all dry ingredients in masala. Mix well.
Add Boiled rajma. Add water if gravy is very thick. Boil it.
Once done garnish with coriander sprigs. Serve with Jeera rice.
