Ingredients
For the Halwa
- 1 cup Pistachios blanched and shelled
- 1/2 cup Gram Flour besan
- 1/2 cup Sugar
- 1/2 cup Water or as needed for desired consistency
- 1/4 cup Clarified Butter clarified butter; desi ghee preferred
- 2 tbsp Melon Seeds magaj
For the Strawberry Swirl
- 1 cup Strawberries fresh, hulled
- 2 tbsp Sugar adjust based on strawberry sweetness, or to taste
Instructions
Prepare the Halwa
- Heat ghee in a heavy-bottomed pan over medium heat. Add besan and cook, stirring constantly, until it turns light golden brown.
- Add sugar and water gradually, stirring continuously to prevent lumps. Continue to cook until the mixture thickens and starts to leave the sides of the pan.
- Stir in the pistachios and melon seeds. Cook for another minute, then remove from heat.
Make the Strawberry Swirl
- In a separate pan, gently cook the hulled strawberries with sugar over low heat until softened and slightly thickened. Mash the strawberries gently to your desired consistency.
Combine and Serve
- Pour the strawberry mixture over the halwa. Gently swirl the two mixtures together using a knife or spatula. Do not mix completely, to retain the swirl effect.
- Serve warm or at room temperature. Garnish with extra pistachios or a few fresh strawberries (optional).
