Instructions
Prepare the Dry Ingredients
- In a large bowl, whisk together the semolina, sugar, baking powder, and cardamom powder until evenly combined.
Combine Wet and Dry Ingredients
- Add the oil and mango pulp to the dry ingredients. Stir in the vanilla extract. Mix until just combined; do not overmix.
Rest the Batter
- Let the batter rest for 15-20 minutes. This allows the semolina to absorb the moisture from the mango pulp, resulting in a more tender cake.
Preheat Oven and Prepare Pan
- Preheat your oven to 350°F (175°C). Grease and flour an 8x4 inch loaf pan (or a similar sized pan).
Bake the Cake
- Pour the batter into the prepared loaf pan. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. If the cake starts browning too quickly, reduce the oven temperature slightly.
Cool and Decorate
- Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Once cooled, frost with cream cheese frosting (optional) and garnish with chopped nuts and mango slices.
