Ingredients
For the Boiled Potatoes:
- 3 Potatoes and mashed, boiled until tender, large, peeled
For the Masala Aloo:
- 2 tbsp Vegetable Oil
- 1/2 tsp Mustard Seeds
- 5-6 Curry Leaves crushed, fresh
- 3 Chilies finely chopped (adjust to your spice preference), green
- 1/2 tsp Turmeric Powder
- 1 tsp Salt or to taste
- 1/2 cup Coriander chopped, fresh
Instructions
Prepare the Potatoes
- Boil 3 large potatoes until tender. Peel and mash them thoroughly.
Temper the Spices
- Heat 2 tablespoons of vegetable oil in a pan over medium heat. Add 1/2 teaspoon of mustard seeds and let them splutter.
- Add 5-6 crushed curry leaves and saute until fragrant.
- Add 3 finely chopped green chilies and saute for about 15 seconds.
- Stir in 1/2 teaspoon of turmeric powder and 1 teaspoon of salt (or to taste) and saute for another 10 seconds.
Combine and Finish
- Add the mashed potatoes to the pan and mix well, ensuring all the potatoes are coated with the spices.
- Add 1/2 cup of chopped coriander leaves. Continue to cook and stir until the potatoes are heated through and slightly yellow in color.
- Remove from heat. Your Masala Aloo is ready!
