For the Boiled Potatoes:

  • 3 Potatoes and mashed, boiled until tender, large, peeled

Prepare the Potatoes

  • Boil 3 large potatoes until tender. Peel and mash them thoroughly.

Temper the Spices

  • Heat 2 tablespoons of vegetable oil in a pan over medium heat. Add 1/2 teaspoon of mustard seeds and let them splutter.
  • Add 5-6 crushed curry leaves and saute until fragrant.
  • Add 3 finely chopped green chilies and saute for about 15 seconds.
  • Stir in 1/2 teaspoon of turmeric powder and 1 teaspoon of salt (or to taste) and saute for another 10 seconds.

Combine and Finish

  • Add the mashed potatoes to the pan and mix well, ensuring all the potatoes are coated with the spices.
  • Add 1/2 cup of chopped coriander leaves. Continue to cook and stir until the potatoes are heated through and slightly yellow in color.
  • Remove from heat. Your Masala Aloo is ready!

Serve

  • Serve the Masala Aloo hot, rolled inside your favorite dosa or as a delicious side dish.
