About Makhana and Paneer Chaat
A quick savoury Navratri vrat chaat made with roasted makhana, paneer, potato, cucumber, lemon and fresh coriander.It is crunchy, filling and easy to put together when you want a light but savoury start to your fasting day.

Ingredients
For the Chaat
- 1 cup Makhana Phool makhana
- 3/4 cup Paneer Cut into small cubes
- 1/2 cup Potato Boiled, peeled and diced
- 1/2 cup Cucumber Finely diced
- 1 tbsp Lemon Juice Freshly squeezed
- 2 tbsp Coriander Leaves Finely chopped
- 1/2 tsp Cumin Roasted and lightly crushed
- 1 Green Chilli Finely chopped, optional
- 1 pinch Black Pepper Freshly ground
- 1 pinch Sendha Namak Or as required
For Cooking
- 1 tsp Ghee For lightly pan-roasting the paneer
Instructions
Roasting the Makhana
- Heat a dry pan over low to medium heat. Add the makhana and roast for 4–5 minutes, stirring frequently, until crisp. Transfer to a plate and allow to cool.
Preparing the Paneer
- Heat the ghee in the same pan over medium heat. Add the paneer cubes and lightly pan-roast for 2–3 minutes, turning gently, until lightly golden on the edges. Remove from the heat.
Assembling the Chaat
- In a mixing bowl, combine the roasted makhana, paneer, boiled potato, cucumber, coriander leaves, cumin, green chilli and black pepper.
- Add lemon juice and sendha namak. Toss gently until everything is evenly coated. Taste and adjust the lemon juice or sendha namak if needed.
- Serve immediately while the makhana is still crisp.
Recipe Notes
Make-Ahead Tip
Boil the potato and roast the makhana ahead of time. Store them separately. Prepare and add the cucumber and lemon juice just before serving so the chaat stays fresh and the makhana remains crisp.Office Tiffin Tip

Skip the potato and increase the paneer slightly if you want a more paneer-focused chaat. You can also leave out the green chilli for a milder version.Vrat Note
