Ingredients
For the White Pea Patties
- 100 gm Peas dried, white
- 2 Tbsp Oats rolled or quick
- 1-2 tsp Salt or to taste, pink
- 2 Tbsp Sesame Oil
For the Seasoning
- 1 tsp Ginger-Garlic Paste
- 1 Chili finely chopped, green
- ½ tsp Cumin Powder roasted
- ½ tsp Moringa Masala
- Salt black, to taste
- Lemon Juice to taste
For Serving (Optional)
- Chutney as needed, sweet
- Coconut Chutney as needed
Instructions
- Soak the dried white peas in enough water for 6-8 hours or overnight. This helps them soften and reduces cooking time.
- Drain the soaked peas and boil them in fresh water until they are completely soft and mashable. This may take about 30-40 minutes depending on the peas.
- Once cooked, drain the peas and roughly mash them using a potato masher or a fork. Leave some texture for a heartier chaat.
- In a mixing bowl, combine the mashed white peas, rolled oats, and pink salt. Mix well to combine. The oats help bind the patties and add a boost of fiber.
- Shape the mixture into small, round patties or tikkis. You should be able to make about 4-6 patties depending on the desired size.
- Heat the sesame oil in a large skillet over medium heat. Once hot, carefully place the white pea patties in the skillet.
- Shallow fry the patties for about 3-4 minutes per side, or until they are golden brown and crispy. This helps develop a delicious crust.
- In a small bowl, combine the ginger-garlic paste, chopped green chili, roasted cumin powder, and moringa masala.
- Sprinkle the seasoning mix evenly over the cooked patties. Add a pinch of black salt and a squeeze of lemon juice for extra flavor.
- Serve the Healthy White Matar Chaat hot, optionally with sweet chutney and coconut chutney for dipping.
Recipe Notes
Expert Tips
- For a richer flavor, consider using bone-in chicken thighs instead of boneless, skinless breasts.
- Adjust the spices to your liking. Add more chili powder for extra heat or more cumin for a deeper, earthier flavor.
- Don't overcrowd the pan when browning the chicken. This will ensure the chicken cooks evenly and gets a nice crust.
Storage Instructions
- Store leftover chicken and sauce in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in the microwave or on the stovetop.
