Instructions

  • Soak the dried white peas in enough water for 6-8 hours or overnight. This helps them soften and reduces cooking time.

  • Drain the soaked peas and boil them in fresh water until they are completely soft and mashable. This may take about 30-40 minutes depending on the peas.
  • Once cooked, drain the peas and roughly mash them using a potato masher or a fork. Leave some texture for a heartier chaat.
  • In a mixing bowl, combine the mashed white peas, rolled oats, and pink salt. Mix well to combine. The oats help bind the patties and add a boost of fiber.

  • Shape the mixture into small, round patties or tikkis. You should be able to make about 4-6 patties depending on the desired size.
  • Heat the sesame oil in a large skillet over medium heat. Once hot, carefully place the white pea patties in the skillet.
  • Shallow fry the patties for about 3-4 minutes per side, or until they are golden brown and crispy. This helps develop a delicious crust.

  • Serve the Healthy White Matar Chaat hot, optionally with sweet chutney and coconut chutney for dipping.

Recipe Notes

Expert Tips

  • For a richer flavor, consider using bone-in chicken thighs instead of boneless, skinless breasts.
  • Adjust the spices to your liking. Add more chili powder for extra heat or more cumin for a deeper, earthier flavor.
  • Don't overcrowd the pan when browning the chicken. This will ensure the chicken cooks evenly and gets a nice crust.

Storage Instructions

  • Store leftover chicken and sauce in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in the microwave or on the stovetop.
