Ingredients
Grains & Lentils
Vegetables
- 1 cup Assorted Vegetables boiled green peas, chopped carrots, etc. (choose your favorites!), grated bottle gourd (lauki)
Spices & Flavorings
- 1 tsp Salt to taste
- 1/2 tsp Chili Powder red
- 4-5 Garlic crushed cloves
- 1 tsp Mustard Seeds
- 1/4 cup Yogurt sour
- 10 Curry Leaves
- 1/4 cup Coriander finely chopped
- 1 tbsp Sesame Seeds white
- 1/2 tsp Baking Soda
- 1 Chili chopped, green
Instructions
Prepare the Batter
- Wash and soak the brown rice and all dals (toor dal, moong dal, urad dal, chana dal, masoor dal) for at least 5 hours. Grind the soaked mixture to a smooth paste using minimal water. Add the semolina (rava) and oats to the batter and grind again to combine.
Combine & Rest
- Add the yogurt (curd) to the batter and whisk well. Gradually add water to achieve a smooth, pourable consistency. Cover the batter and let it rest overnight in the refrigerator.
Prepare the Tempering
- Heat oil in a small pan. Add mustard seeds and let them splutter. Add crushed garlic, sesame seeds, and curry leaves. Sauté briefly until fragrant.
Combine & Bake
- In a bowl, combine the rested batter with your choice of vegetables, salt, and red chili powder. Add half of the prepared tempering to the batter. Stir in chopped green chilies, coriander leaves, and baking soda. Whisk gently to combine. Pour the batter into a greased cake tin.
Garnish & Bake
- Garnish the top of the Handvo with the remaining tempering and a sprinkle of chopped coriander leaves. Preheat your oven to 350°F (180°C) for 10 minutes. Bake the Handvo for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
Serve
- Let the Handvo cool slightly in the tin before demolding. Serve warm with mint chutney.
