Ingredients
 

For the Praline

  • 5.5 tbsp Rolled Oats multigrain rolled oats preferred
  • 9 Almonds sliced or chopped
  • 2 tbsp Sugar granulated sugar; adjust to taste

For the Kulfi

  • 0.5 ltr Milk full-fat milk recommended for creaminess
  • 1/4 cup Sugar adjust to your preferred sweetness
  • Pinch Cardamom Powder for extra flavor, optional
  • 6 Kulfi Molds or small containers suitable for freezing

Instructions
 

Prepare the Praline

  • Dry roast the rolled oats and almonds in a pan over medium heat until lightly golden and fragrant. Set aside to cool.

Make the Praline

  • In the same pan, add 2 tablespoons of sugar. Cook over medium heat, stirring constantly, until the sugar melts and turns a light amber color (caramel). Immediately add the roasted oats and almonds. Stir to combine and remove from heat.
  • Pour the mixture onto a lightly oiled plate or parchment paper. Use a rolling pin to spread it thinly into a flat layer.
  • Let the praline cool completely for at least 15-20 minutes until it hardens.
  • Once cool, break the praline into pieces and grind it into a fine powder using a food processor or blender.

Make the Kulfi

  • In a heavy-bottomed saucepan, heat the milk over medium heat. Stir frequently and reduce the milk by half; this will take approximately 20-25 minutes. Be careful not to burn it.
  • Add the sugar and cardamom powder (if using). Stir well to dissolve the sugar. Simmer for another 5 minutes. Remove from heat and let it cool completely.
  • Stir in the powdered praline. Make sure there are no lumps.
  • Pour the mixture into kulfi molds or small containers. Freeze for at least 4 hours, or preferably overnight, until solid.

Serve

  • Remove the Kulfi from the molds and serve immediately. Enjoy!

  • Toasting the oats and almonds enhances their flavor and adds a lovely aroma.
