  • 1/2 cup Coconut freshly grated is best, shredded
  • 1 tbsp Ghee clarified butter
  • 12 Cashews whole or halved
  • 12 Raisins

Instructions
 

Prepare the Millet

  • Wash the foxtail millet thoroughly and soak it in water for at least 30 minutes, or up to 1 hour. This helps soften the millet and reduces cooking time.

Cook the Millet

  • Pressure cook the soaked millet with 2 cups of water for 3-4 whistles, or until completely soft. Alternatively, cook in a thick-bottomed pan over medium heat until all the water is absorbed and the millet is tender.

Make the Kheer

  • Add the cooked millet to a saucepan. Pour in the milk and add the jaggery. Stir well to combine and cook over medium-low heat until the jaggery melts completely and the mixture begins to thicken slightly.

Fry the Garnish

  • In a separate small pan, heat the ghee. Add the cashews and raisins and sauté until lightly golden brown. Set aside.

Combine & Finish

  • Stir in the shredded coconut and cardamom powder into the kheer. Cook for another 2-3 minutes, allowing the flavors to meld together.

Serve

  • Stir in the fried cashews and raisins. Serve the Foxtail Millet Kheer warm or chilled. Garnish with extra cashews or a sprinkle of cardamom powder if desired.

Expert Tips for the Perfect Foxtail Millet Kheer

  • For a richer flavor, use full-fat coconut milk instead of some of the regular milk.
  • If you don't have jaggery, you can substitute with an equal amount of brown sugar or maple syrup, but the flavor will be slightly different.
