Ingredients
Millet & Liquid
- 1 cup Foxtail Millet
- 2 cup Water for cooking the millet
- 2 1/2 cup Milk
Sweetener & Spices
- 1/2 cup Jaggery or to taste, adjust to your preference
- 1 tsp Cardamom Powder elaichi
Instructions
Prepare the Millet
- Wash the foxtail millet thoroughly and soak it in water for at least 30 minutes, or up to 1 hour. This helps soften the millet and reduces cooking time.
Cook the Millet
- Pressure cook the soaked millet with 2 cups of water for 3-4 whistles, or until completely soft. Alternatively, cook in a thick-bottomed pan over medium heat until all the water is absorbed and the millet is tender.
Make the Kheer
- Add the cooked millet to a saucepan. Pour in the milk and add the jaggery. Stir well to combine and cook over medium-low heat until the jaggery melts completely and the mixture begins to thicken slightly.
Fry the Garnish
- In a separate small pan, heat the ghee. Add the cashews and raisins and sauté until lightly golden brown. Set aside.
Combine & Finish
- Stir in the shredded coconut and cardamom powder into the kheer. Cook for another 2-3 minutes, allowing the flavors to meld together.
Serve
- Stir in the fried cashews and raisins. Serve the Foxtail Millet Kheer warm or chilled. Garnish with extra cashews or a sprinkle of cardamom powder if desired.
