Ingredients
2-Minute Chocolate Cake
- 2 Tbsp Butter melted
- 1 Tbsp Yogurt
- 5 Tbsp Milk
- 3 Tbsp Flour whole wheat
- 3 Tbsp Sugar caster
- 1/2 tsp Baking Powder
- 1 pinch Baking Soda
- 1 Tbsp Cocoa Powder
- 1 Tbsp Chocolate Chips
Strawberry Syrup
- 1 cup Strawberries finely chopped
- 1/2 cup Water
- 3 Tbsp Sugar
Whipped Cream
- 200 ml Cream heavy, very cold
- 4 Tbsp Sugar caster
- 2 tsp Vanilla Extract
Assembly
Instructions
- In a microwave-safe mug, combine the melted butter, yogurt, milk, whole wheat flour, caster sugar, baking powder, baking soda, and cocoa powder.
- Mix thoroughly with a fork until smooth. This ensures even cooking and a tender crumb.
- Sprinkle chocolate chips on top. Microwave for 2 minutes. Let cool completely.
- Once cooled, cut the cake into small rounds. Set aside.
- In a saucepan, combine the chopped strawberries, water, and sugar.
- Place the saucepan over low heat and stir until the sugar melts. Low heat prevents burning and ensures even syrup consistency.
- Continue stirring until the sauce thickens, about 4 minutes. Remove from heat and let cool completely.
- In a cold bowl, whip the very cold heavy cream, caster sugar, and vanilla extract on high speed until stiff peaks form. Using cold ingredients helps the cream whip up faster and hold its shape.
- Refrigerate until ready to use.
- Place a chocolate cake round at the bottom of each jar.
- Drizzle about 2 tablespoons of strawberry syrup over the cake. It will soak in beautifully.
- Add a few strawberry slices.
- Top with whipped cream and chocolate chips.
- Repeat layers until the jars are full, ending with whipped cream.
- Garnish with chocolate chips and strawberry slices.
- Cover and refrigerate for at least 30 minutes before serving. These delightful jars will stay fresh in the refrigerator for up to 4 days.
Recipe Notes
Good To Know
- For an extra layer of crunch, sprinkle a thin layer of crushed roasted nuts (such as almonds or hazelnuts) between the cake and fruit layers.
- For a vegan version, substitute dairy yogurt with coconut or almond yogurt and use plant-based milk and vegan butter for the cake batter.
- To prevent the cake from becoming soggy, allow the microwaved cake to cool completely before slicing and assembling.
- Brush each cake layer lightly with a mixture of fruit juice and a splash of vanilla extract for enhanced flavor and moisture.
- For an indulgent presentation, top each jar with a swirl of whipped coconut cream and a chocolate shaving or a whole fresh berry just before serving.
Expert Tips
- Microwaving times may vary depending on your microwave's wattage. Start with the recommended time and add 15-second intervals as needed until the cake is cooked through.
- Get creative with the fruit layers! Use a mix of berries, sliced bananas, peaches, or any other fruit that complements the cake flavor.
- For a neater presentation, use a piping bag or a zip-top bag with a corner snipped off to fill the jars with the cake batter and yogurt.
Storage Instructions
- Store leftover parfaits in airtight containers in the refrigerator for up to 3 days.
