Instructions

Preparation

  • Clean the goat spleen thoroughly and cut it into small, bite-sized pieces.
  • Finely chop the small onions.

Stir-frying the Spices and Aromatics

  • Heat oil in a pan or kadai over medium heat. Add mustard seeds and cumin seeds; allow them to crackle.
  • Add curry leaves and sauté briefly until fragrant.
  • Add the chopped onions and sauté until golden brown.

Cooking the Goat Spleen

  • Add the goat spleen pieces to the pan. Sprinkle with cumin powder, chili powder, pepper, and salt.
  • Stir well to coat the spleen evenly with the spices.
  • Add 1 cup of water, cover, and cook for 15-20 minutes, or until the spleen is tender and the water has reduced slightly, stirring every 5 minutes.

Final Touches

  • Once cooked, remove the lid and allow any excess water to evaporate.
  • Transfer to a serving bowl, cover, and let rest for 5 minutes to retain the aroma.
  • Serve hot with steamed rice and your favorite curry or side dish.

Recipe Notes

Expert Tips for Perfect Manneral Vathakkal

  • For extra tender spleen, marinate it in a little yogurt and ginger-garlic paste for at least 30 minutes before cooking.
  • Adjust the amount of chili powder to your preferred spice level.
  • If the spleen becomes too dry during cooking, add a tablespoon or two of water at a time.
  • Don't overcook the spleen, as it can become tough. The goal is tender, melt-in-your-mouth texture.
