Prepare the Batter

  • Combine the flour, salt, and ajwain seeds in a bowl. Gradually add water, mixing until a smooth, slightly thick batter forms. Let the batter rest for about 1.5 hours to ferment.

Add Remaining Ingredients

  • After 1.5 hours, add the chopped coriander leaves, crushed peas, and additional salt (if needed) to the batter. Mix everything thoroughly until well combined.

Fry the Gheur

  • Heat oil in a non-stick pan or kadai over medium heat. Take a small amount of batter (about 2 tablespoons) and gently pour it into the hot oil, spreading it out to form a thin, round pancake.

Cooking the Gheur

  • Fry the Gheur on one side only until golden brown and crispy. You'll notice the pancake starts to puff up and form a distinct shape.

Removing the Gheur

  • Carefully remove the cooked Gheur from the pan using a spatula or a knitting needle (as traditionally done). Repeat with the remaining batter until all the batter is used.

Serving Suggestions

  • Serve the crispy Gheur warm with sugar, yogurt, or a savory dish like potato curry (Aloo ki Sabzi).
