Ingredients
 

For the Mashed Potatoes

  • 3 medium Potatoes yukon gold or similar, yielding about 1 1/4 cups tightly packed mashed potato

  • 1 tbsp Flaxseed Meal or 1 tbsp flaxseed mixed with 1 tbsp warm water; let sit 10 minutes to thicken
  • 1 tbsp Butter melted
  • 1/4 cup Water add more if needed to adjust dough consistency.

Prepare the Potatoes

  • Peel and chop the potatoes into small, even-sized chunks. Boil in enough water to cover until tender, about 15-20 minutes. Drain well and rinse under cold water to stop the cooking process.

Make the Flaxseed ‘Egg’

  • In a small bowl, combine the flaxseed meal and warm water (or use pre-made flax egg). Let it sit for 10 minutes to thicken.

Mash the Potatoes

  • Mash the cooked potatoes until smooth and creamy. Measure out 1 1/4 cups of mashed potatoes.

Combine Dry Ingredients

  • In a large bowl, whisk together the barley flour, whole wheat flour, oat flour, quick-cooking oats, and salt.

Bring it Together

  • Add the melted butter, flaxseed mixture, and mashed potatoes to the dry ingredients. Mix thoroughly until just combined; do not overmix. The dough will be quite sticky. Add water, a tablespoon at a time, if the dough is too dry.

Shape and Bake

  • Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper. Lightly flour your hands and shape the dough into 4 equal-sized balls. Gently flatten each ball on the prepared baking sheet to about 1/4 inch thickness. Prick the surface with a fork several times.

Bake until Golden

  • Bake for 20-25 minutes, or until the flatbreads are lightly golden brown and cooked through.
