Ingredients
For the Mashed Potatoes
- 3 medium Potatoes yukon gold or similar, yielding about 1 1/4 cups tightly packed mashed potato
Dry Ingredients
- 1/4 cup Barley Flour can be substituted with ground barley grains
- 1/4 cup Whole Wheat Flour whole
- 1/2 cup Oat Flour can be made by grinding quick-cooking oats
- 1/8 cup Quick-Cooking Oats
- 0.75 tsp Salt adjust to taste
Wet Ingredients
- 1 tbsp Flaxseed Meal or 1 tbsp flaxseed mixed with 1 tbsp warm water; let sit 10 minutes to thicken
- 1 tbsp Butter melted
- 1/4 cup Water add more if needed to adjust dough consistency.
Instructions
Prepare the Potatoes
- Peel and chop the potatoes into small, even-sized chunks. Boil in enough water to cover until tender, about 15-20 minutes. Drain well and rinse under cold water to stop the cooking process.
Make the Flaxseed ‘Egg’
- In a small bowl, combine the flaxseed meal and warm water (or use pre-made flax egg). Let it sit for 10 minutes to thicken.
Mash the Potatoes
- Mash the cooked potatoes until smooth and creamy. Measure out 1 1/4 cups of mashed potatoes.
Combine Dry Ingredients
- In a large bowl, whisk together the barley flour, whole wheat flour, oat flour, quick-cooking oats, and salt.
Bring it Together
- Add the melted butter, flaxseed mixture, and mashed potatoes to the dry ingredients. Mix thoroughly until just combined; do not overmix. The dough will be quite sticky. Add water, a tablespoon at a time, if the dough is too dry.
Shape and Bake
- Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper. Lightly flour your hands and shape the dough into 4 equal-sized balls. Gently flatten each ball on the prepared baking sheet to about 1/4 inch thickness. Prick the surface with a fork several times.
Bake until Golden
- Bake for 20-25 minutes, or until the flatbreads are lightly golden brown and cooked through.
Serve and Enjoy
- Serve the Perunarieska warm. Enjoy with butter, milk, cheese spreads, soups, or any topping of your choice!
Recipe Notes
Expert Tips for Perfect Perunarieska
- For extra flavor: Add a teaspoon of caraway seeds or finely chopped fresh herbs to the dough.
- Adjust the texture: If you prefer a crispier flatbread, add a little extra flour to the dough. For a softer flatbread, add a little more water.
- Don't overmix: Overmixing the dough will make the flatbreads tough. Mix only until the ingredients are just combined.
- Baking time may vary: Keep an eye on your flatbreads while baking, as oven temperatures can vary. Adjust baking time as needed to achieve the desired golden brown color.
