  • Peel the mangoes and cut the flesh away from the pits.
  • Dice the mango flesh and add it to a blender or food processor.
  • Blend until completely smooth to make a mango puree.
  • Add the cold heavy cream and powdered sugar to a large mixing bowl.
  • Add the vanilla bean paste or vanilla extract, if using.
  • Beat the cream until it reaches medium peaks.
  • Add the mango puree to the whipped cream.
  • Gently fold until smooth, airy, and fully combined.
  • Spoon or pipe the mousse into five small serving jars or dessert cups.
  • Refrigerate for at least 2 hours, or until cold and set.
  • Garnish with small mango cubes and mint leaves before serving.

Recipe Notes

  • Use fully ripe mangoes for the sweetest flavor and smoothest puree.
  • Chill the mixing bowl and beaters before whipping the cream.
  • The heavy cream must be very cold so it whips properly.
  • Whip the cream only to medium peaks and do not overbeat it.
  • Fold the mango puree gently into the whipped cream to keep the mousse light and airy.
  • Taste the mango puree before adding all the powdered sugar and adjust the sweetness if needed.
  • Refrigerate the mousse for at least 2 hours before serving.
  • Add the mango cubes and mint just before serving.
  • Store covered in the refrigerator for up to 2 days.
