  • In a mixing bowl, combine the gram flour, finely chopped onion, yogurt, salt, red chili powder, poppy seeds, and oil.
  • Mix well and gradually add water to form a soft dough. Knead the dough until smooth.
  • Shape the dough into small, flat tikkis (patties).
  • Bring a pot of water to a boil. Add the tikkis to the boiling water and cook for 7-10 minutes, or until they float to the surface and are cooked through.
  • Reserve the cooking water for the gravy. This adds flavor and helps thicken the kadi.
  • Remove the tikkis from the water and let them cool completely.
  • Traditionally, the tikkis are deep-fried until golden brown for a crispy texture and longer shelf life. This step is optional but recommended for a more authentic flavor.
  • Heat oil in a pan or pot over medium heat. Add the cumin seeds and allow them to splutter.
  • Add the onion puree and fry until it changes color and deepens in flavor. This caramelization process adds sweetness and depth to the gravy.
  • Add the ginger-garlic paste and sauté for a minute until fragrant.
  • Add the tomato puree and cook until the oil starts to separate from the mixture. This indicates that the tomatoes are cooked and the flavors have melded.

  • Pour in the reserved water from boiling the tikkis.
  • Gently add the cooked chickpea fritters (dharan) to the gravy.

  • Garnish with fresh coriander leaves and serve hot with ghee-brushed phulkas (puffed flatbreads).
