Ingredients
For the Potato Mixture
- 2 Potato large, boiled and mashed
- 2 Chili finely chopped, green
- 1/2 inch Ginger grated
- 8-10 Curry Leaves
- 1 cup Coriander chopped, dhania
- 1 1/2 tsp Salt or to taste
- 1 tsp Chili Powder red
- 1/4 tsp Garam Masala
For the Chickpea Batter
- 1 cup Gram Flour besan
- 1 1/2 tsp Salt or to taste
- 1/2 tsp Chili Powder red
- cup Water as needed
For Frying
- Oil for deep frying
Instructions
- In a bowl, whisk together the chickpea flour, salt, and red chili powder.
- Gradually add water, whisking constantly to avoid lumps. The batter should be thick enough to coat the potato mixture.
- In a large bowl, combine the mashed potatoes, chopped green chilies, grated ginger, curry leaves, and chopped coriander.
- Season the potato mixture with salt, red chili powder, and garam masala. Mix thoroughly until all the spices are evenly distributed.
- Divide the potato mixture into small, equal portions. Shape each portion into a ball.
- Heat the oil in a deep pan over medium-high heat. The oil is ready when a small drop of batter sizzles immediately.
- Dip each potato ball into the chickpea batter, ensuring it's fully coated.
- Carefully drop the coated potato balls into the hot oil. Fry in batches to avoid overcrowding the pan, which would lower the oil temperature and result in soggy tikkis.
- Fry for about 3-4 minutes, until lightly golden. This initial fry partially cooks the tikkis.
- Remove the tikkis from the oil using a slotted spoon. Drain on a wire rack or paper towel-lined plate.
- Gently flatten each partially fried tikki.
- Return the flattened tikkis to the hot oil. Reduce the heat to medium-low. This second fry crisps the tikkis and develops a deep golden-brown color.
- Fry for another 2-3 minutes, until golden brown and crispy.
- Remove the tikkis from the oil and drain on a wire rack or paper towel-lined plate. This removes excess oil and ensures maximum crispiness.
- Serve the Besanwali Patateji Tikki hot, with pav (Indian bread rolls) and mint-tamarind chutney.
