Ingredients
Dry Ingredients
- 100 gm All-Purpose Flour also known as refined flour; sift twice
- 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Cardamom Powder elaichi; freshly ground is best
Wet Ingredients
- 50 gm Mawa crumbled, unsweetened khoya
- 200 gm Sweetened Milk condensed
- 50 gm Butter softened to room temperature, unsalted
- 4 tbsp Milk more may be needed to adjust consistency
- 1 tsp Apple Cider Vinegar
Garnish
- 25 gm Cashews coarsely chopped, for garnish
Instructions
Prepare the Dry Ingredients
- Sift together the all-purpose flour, baking powder, and baking soda twice. Set aside.
Cream the Wet Ingredients
- In a large bowl, cream together the softened butter and sweetened condensed milk using an electric mixer or whisk until light and fluffy. Add the crumbled mawa and beat until well combined.
Combine and Bake
- Gradually add the sifted dry ingredients to the wet ingredients, gently folding with a spatula or balloon whisk until just combined. Do not overmix. Stir in the cardamom powder and chopped cashews. Add the milk, a little at a time, until the batter reaches a smooth, slightly thick consistency, similar to pancake batter. Add the apple cider vinegar and whisk gently for 4-5 strokes.
