Instructions

Prepare the Puri Dough

  • Mix together the all-purpose flour and semolina. Gradually add water, mixing until a firm, pliable dough forms. Knead for 5-7 minutes. Cover and let rest for 10 minutes.

Roll and Fry the Puris

  • Divide the dough into small, equal-sized balls (approx. 60). Roll each ball into a 2-inch diameter circle. Heat oil in a deep pan or kadai to medium-high heat. Carefully drop puris into hot oil, frying until golden brown and puffed up, flipping occasionally. Remove and drain on paper towels.

Prepare the Potato Filling

  • While puris are frying, mash the boiled potatoes. Season with salt, red chili powder, and garam masala. Mix in chopped onions.

Assemble the Dahi Batata Puri

  • Fill each puri with the spiced mashed potatoes, soaked boondi, and a spoonful of the prepared onion mixture. Top generously with yogurt, sweet chutney, and sev. Serve immediately and enjoy!

Recipe Notes

Expert Tips for Perfect Dahi Batata Puri:

  • For extra crispy puris, add a pinch of baking soda to the dough.
  • Ensure the oil is hot enough before adding the puris to prevent them from absorbing too much oil.
  • Adjust the amount of chili powder according to your spice preference.
  • For a more flavorful filling, add a pinch of chaat masala to the potatoes.
