Instructions

Prepare the Sago

  • Soak the sago in 2 cups of water for at least 3 hours. Drain well and gently press to remove excess water.

Combine Ingredients

  • In a large mixing bowl, combine the drained sago, mashed potatoes, roasted peanuts, green chilies, salt, red chili powder, ground cumin, and fresh coriander. Mix thoroughly until well combined.

Shape the Fritters

  • Take small portions of the mixture (about 1 tablespoon each) and roll them into balls.

Fry the Fritters

  • Heat the cooking oil in a deep wok or pan over medium heat. Carefully drop the sago balls into the hot oil, ensuring not to overcrowd the pan. Fry until golden brown and crispy, turning occasionally. This should take about 3-4 minutes.

Drain and Serve

  • Remove the fritters from the oil and place them on a wire rack or paper towel-lined plate to drain excess oil. Serve hot and enjoy!

Recipe Notes

Expert Tips for Perfect Fritters

  • For extra crispy fritters, ensure the sago is well-drained before mixing.
  • Don't overcrowd the pan while frying; this will lower the oil temperature and result in oily fritters.
  • Adjust the amount of red chili powder to your preference.
  • Serve immediately for the best texture and flavor. These fritters are best enjoyed fresh.
