Ingredients
For the Zesty Salsa Filling
- 2 Tomatoes chopped
- 1 Onion chopped
- 1/2 Bell Peppers capsicum, chopped
- 6-7 clove Garlic minced
- 2 Tbsp Tomato Ketchup
- 1 Tbsp Chili Sauce red
- 1 tsp Salt or to taste
- 1 tsp Chili Flakes
- 1/2 cup Water
For the Paneer Bites
- 100 gm Cottage Cheese cut into equal-sized squares or rectangles
- 1/4 cup Salsa for extra flavor (optional)
For the Crispy Coating
- 1/2 cup Corn Flour
- 2 Tbsp All-Purpose Flour maida
- 1 cup Rice Flour
- 1/2 tsp Salt or to taste
- 1/4 tsp Chili Powder red
- 1/4 tsp Turmeric Powder haldi
- 1 tsp Chaat Masala
- 1 tsp Oregano dried
- 1/2 cup Water
For Frying
- 2 cups Oil for frying
Instructions
Make the Zesty Salsa Filling
- Heat 2 tablespoons of oil in a wok or large skillet over medium heat.
- Add the minced garlic and sauté until fragrant, about 30 seconds. Be careful not to burn the garlic.
- Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.
- Add the chopped bell pepper and cook for 2 minutes, until slightly softened.
- Stir in the chopped tomatoes, salt, chili flakes, red chili sauce, and tomato ketchup. Mix well to combine.
- Add 1/2 cup of water, bring to a simmer, and cook for 5 minutes, or until the salsa has thickened slightly.
- Remove from heat and set aside.
Assemble the Paneer Bites
- Take one paneer square and spread a spoonful of the prepared salsa over it.
- Top with another paneer square to create a sandwich.
- Repeat with the remaining paneer squares.
Prepare the Crispy Coating and Fry
- In a bowl, whisk together the corn flour, all-purpose flour, salt, red chili powder, turmeric powder, chaat masala, dried oregano, and water. The batter should be smooth and lump-free, with a consistency similar to pancake batter.
- Dip each stuffed paneer bite into the batter, ensuring it's fully coated.
- Dredge the batter-coated paneer bite in rice flour, pressing gently to ensure it adheres evenly. This double coating creates extra crispiness.
- Heat 2 cups of oil in a deep fryer or large pot over medium-high heat. The oil is ready when a small drop of batter sizzles immediately upon contact.
- Carefully place the coated paneer bites into the hot oil, frying in batches to avoid overcrowding. Fry for 3-4 minutes per side, until golden brown and crispy.
- Remove the crispy paneer bites from the oil and place them on a wire rack or paper towel-lined plate to drain excess oil.
- Serve the hot, crispy Mexican Paneer Bites immediately with tomato ketchup or your favorite dipping sauce.
Recipe Notes
Good To Know
- For extra flavor and a bit of crunch, lightly toast the paneer cubes on a grill or skillet before stuffing them—this also helps the bites hold their shape better when served warm or at room temperature.
- If you’d like to go fully Mexican, add a sprinkle of cumin powder or smoked paprika to the filling for a deeper, smokier profile that complements the paneer beautifully.
- To serve as party finger food, secure each stuffed paneer bite with a colorful toothpick and garnish with a tiny cilantro leaf or a thin slice of jalapeño for visual appeal and an added kick.
- Leftover filling can be mixed into cooked rice or used as a zesty topping for nachos, making the most out of all your ingredients.
Expert Tips
- For a creamier filling, consider adding a dollop of sour cream or Greek yogurt to the mixture.
- If you're short on time, pre-shredded cheese blends work well in this recipe. Just be sure to choose a blend that melts nicely.
- Don't overstuff the paneer; it could burst during cooking. A slightly less-full paneer bite is better than one that spills its contents.
Storage Instructions
- Store leftover stuffed paneer bites in an airtight container in the refrigerator for up to 3 days. Reheat gently in a microwave or oven before serving.
