- 1 cup Urad Dal Flour
- 3 cup Rice Flour
- 1 pinch Salt

- In a large bowl, combine the urad dal flour, rice flour, and salt.
- Add water gradually to the dry ingredients, whisking constantly to form a smooth batter. Ensure there are no lumps.
- Cover the batter and let it rest for at least 6 hours at room temperature. This allows the batter to ferment slightly, resulting in a lighter, crispier dosa.
- After resting, whisk the batter again for a few minutes until light and airy.
- Heat a non-stick skillet or tawa over medium-high heat. Lightly grease the surface with ghee.
- Pour a ladleful of batter onto the hot tawa and quickly spread it in a circular motion using the back of the ladle to create a thin crepe. The thinner the batter, the crispier the dosa.
- Drizzle a little ghee around the edges and over the surface of the dosa.
- Cook for 2-3 minutes, or until the edges start to lift and the underside turns golden brown and crispy.
- If desired, you can flip the dosa and cook the other side for a minute. However, for a truly crispy dosa, cooking one side is often sufficient.
- Serve immediately with your favorite chutney or sambar. Enjoy!
