  • In a large bowl, combine the urad dal flour, rice flour, and salt.
    Creamy milk being boiled in a stainless steel pot.
  • Add water gradually to the dry ingredients, whisking constantly to form a smooth batter. Ensure there are no lumps.
  • Cover the batter and let it rest for at least 6 hours at room temperature. This allows the batter to ferment slightly, resulting in a lighter, crispier dosa.
  • After resting, whisk the batter again for a few minutes until light and airy.
  • Heat a non-stick skillet or tawa over medium-high heat. Lightly grease the surface with ghee.
  • Pour a ladleful of batter onto the hot tawa and quickly spread it in a circular motion using the back of the ladle to create a thin crepe. The thinner the batter, the crispier the dosa.

  • Drizzle a little ghee around the edges and over the surface of the dosa.
