Ingredients
 

For the Chicken

  • 500 gm Chicken boneless, cut into bite-sized pieces, skinless chicken thighs or breasts
  • 1 cup Chicken Stock or water
  • 1-2 tsp Salt or to taste

  • 1 cup Carrots peeled and chopped
  • 1 cup Potatoes peeled and cubed, sweet
  • 1 cup Beans green, trimmed and halved

For Serving

  • 1 cup Rice Noodles or cooked rice
  • 2 bulb Onions finely chopped, for garnish, green, green parts

Instructions
 

Prepare the Chicken

  • Season chicken pieces with salt and brown them in a wok or large pan with 1 tablespoon of oil over high heat. Set aside.

Parboil the Vegetables

  • Parboil carrots, sweet potatoes, and green beans in boiling salted water for 4-5 minutes until slightly tender. Immediately transfer to ice water to stop the cooking process and preserve color. Drain well.

Sauté Aromatics

  • Heat remaining oil in a large pot or Dutch oven over medium heat. Add the white parts of the green onions and cook until translucent. Add minced garlic and grated ginger; cook until fragrant.

Build the Curry

  • Add the bruised lemongrass stalks and Thai green curry paste. Stir and cook for about 30 seconds until fragrant and the oil begins to separate.

Simmer the Chicken

  • Add the browned chicken and chicken stock (or water) to the pot. Bring to a simmer, then reduce heat and cook for 10 minutes.

Add Coconut Milk and Vegetables

  • Stir in sugar, coconut milk, and lime zest. Simmer gently for another 5 minutes, until the chicken is cooked through. Add the parboiled vegetables; stir gently and simmer for 2 more minutes until heated through. Stir in the lime juice and adjust seasoning with salt as needed.

Serve

  • Garnish with the chopped green parts of the green onions. Serve hot with rice noodles or cooked rice.

Expert Tips for the Best Thai Chicken Curry

  • For a richer flavor, use full-fat coconut milk and marinate the chicken in some of the curry paste for at least 30 minutes before cooking.
  • Adjust the amount of Thai curry paste to your spice preference. Start with less and add more to taste.
  • Don't overcook the vegetables; they should be tender-crisp. Overcooking will make them mushy.
  • Add other vegetables like bell peppers, bamboo shoots, or mushrooms for extra flavor and texture.
