Ingredients
For the Paneer Marinade
- 250 gm Cottage Cheese
- 2 tbsp Yogurt
- 1 tsp Chili Powder red
- 1/2 tsp Salt or to taste
- 1 pinch Food Coloring optional
For the Gravy
- 1/2 cup Oil
- 3 medium Onions
- 3 1/2 medium Tomatoes
- 2 Chilies green
- 2 tbsp Coriander Leaves chopped, fresh
- 8 Cashews whole
- 1 tsp Poppy Seeds roasted
- 1 tsp Cumin Seeds roasted
- 1 tsp Ginger Paste
- 1 tsp Garlic Paste
- 1 tsp Coriander ground
- 1 tsp Garam Masala
- 2 tsp Heavy Cream
- 1 tsp Dried Fenugreek Leaf dried fenugreek leaves
Instructions
- In a bowl, combine the paneer, 2 tablespoons of yogurt, red chili powder, salt, and optional food coloring. Gently mix to coat the paneer evenly.
- Allow the paneer to marinate for at least 15 minutes. This allows the paneer to absorb the flavors of the marinade.
- Heat the oil in a wok or large skillet over medium heat. Add the onions and sauté until golden brown and softened. This builds a flavorful base for the gravy.
- Add the marinated paneer to the skillet and fry for 2 minutes, lightly browning on all sides. Remove the paneer and set aside.
- In a blender or food processor, combine the tomatoes, green chilies, half of the fresh coriander leaves, cashews, poppy seeds, roasted cumin seeds, ginger paste, garlic paste, and the sautéed onions. Blend until smooth to create a flavorful paste.
- Pour the blended tomato mixture into the same skillet and cook over medium heat. Stir in the ground coriander and garam masala. Cook until the gravy thickens slightly and the oil begins to separate, indicating that the flavors have melded.
- Return the fried paneer to the skillet. Stir gently to coat the paneer in the gravy.
- Stir in the heavy cream and kasuri methi. Do not cook further after adding the cream to preserve its fresh flavor and prevent curdling.
- Transfer the Paneer Lapeta to a serving bowl. Garnish with the remaining fresh coriander leaves. Serve hot and enjoy!
