  • Grind together the raw mango, green chilies, coriander leaves, mint leaves, lemon juice, and garlic cloves into a smooth paste using a blender or food processor.

Cook the Rice

  • Soak the basmati rice in water for at least 30 minutes.

Sauté Vegetables and Spices

  • Heat the oil in a large pot or pressure cooker over medium heat. Add the chopped onion and sauté until lightly golden brown. Add the green peas and sauté for another 2-3 minutes.

Add the Paste and Spices

  • Stir in the mango-spice paste and cook for 5-7 minutes, until the oil begins to separate from the paste. Add the garam masala and salt, and mix well.

Combine and Cook

  • Add the soaked basmati rice and water to the pot. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked through and the liquid is absorbed. Alternatively, pressure cook for 2 whistles.

Garnish and Serve

  • Fluff the rice gently with a fork. Garnish with fresh coriander and mint leaves. Serve hot and enjoy!
