Brinjal with green chana/ hare chane ka baingan
This is a seasonal recipe, when we get green chana we can try this healthy recipe. I tried with very little oil and less spices. Finally it gives a good taste and may be appreciated.

Ingredients
- 1 Brinjal (medium size)
- 1 cup Chana (green)
- ½ cup Mashed Potato
- ½ cup Spring Onion (chopped)
- 1 tsp Garlic (chopped)
- 1 tsp Green Chillies (chopped)
- 1 tsp Poppy Seeds
- 1 tsp Garam Masala
- 1 tbsp Mustard Oil
- 1 tbsp cashews (chopped)
- 1 tbsp Raisin
- leaves Coriander (chopped)
- 1-2 tsp Salt (or as per taste)

Instructions
- Roughly crush the green chana and mash the boiled potatoes.
- Heat mustard oil add chopped garlic and green chillies. Add poppy seeds, chopped spring onion and crushed green chana.
- Stir for a few minutes add salt, mashed potatoes, garam masala and chopped cashew nuts.
- Dry roast the brinjal then scoop a little portion. Mix with cooked chana and coriander leaves. Shallow fry the roasted brinjal with little oil and salt.
- Now fill the brinjal with cooked chana. Again shallow fry both sides and serve with any combination.
