Brinjal with green chana/ hare chane ka baingan This is a seasonal recipe, when we get green chana we can try this healthy recipe. I tried with very little oil and less spices. Finally it gives a good taste and may be appreciated.

  • 1 Brinjal medium size
  • 1 cup Chana green
  • ½ cup Mashed Potato
  • ½ cup Spring Onion chopped
  • 1 tsp Garlic chopped
  • 1 tsp Green Chillies chopped
  • 1 tsp Poppy Seeds
  • 1 tsp Garam Masala
  • 1 tbsp Mustard Oil
  • 1 tbsp cashews chopped
  • 1 tbsp Raisin
  • leaves Coriander chopped
  • 1-2 tsp Salt or as per taste


  • Roughly crush the green chana and mash the boiled potatoes.

  • Heat mustard oil add chopped garlic and green chillies. Add poppy seeds, chopped spring onion and crushed green chana.
  • Stir for a few minutes add salt, mashed potatoes, garam masala and chopped cashew nuts.
  • Dry roast the brinjal then scoop a little portion. Mix with cooked chana and coriander leaves. Shallow fry the roasted brinjal with little oil and salt.
  • Now fill the brinjal with cooked chana. Again shallow fry both sides and serve with any combination.
