Ingredients
 

Vegetables

  • 250 gm Okra also known as ladies fingers. trim the ends and wash thoroughly.
  • 1 medium Onion finely chopped
  • 1 medium Tomato finely chopped
  • 1-2 Chili adjust to your spice preference, finely chopped, green
  • 1/4 cup Coriander chopped, for garnish

Preparation

  • Wash and trim the okra. Finely chop the onion, tomato, and green chilies.

Sauté Aromatics

  • Heat mustard oil in a pan. Add onion paste, ginger paste, garlic paste, turmeric powder, and red chili powder. Sauté until fragrant.

Add Vegetables and Spices

  • Add the chopped onions and tomatoes. Stir well and cook for 2-3 minutes. Add the okra and salt. Mix well and let it shallow fry for a few minutes.

Simmer and Finish

  • Cover the pan and cook for about 5 minutes, or until the okra is tender-crisp. Add cumin seeds and coriander powder. Mix well. Cover again for 1 minute.

Serve

  • Stir in the mustard sauce. Garnish with fresh cilantro. Serve hot with rice or roti.
