Ingredients

- 2 tsp Onion paste
- 1 tsp Garlic paste
- 1 tsp Ginger paste
- 1/2 tsp Chili Powder red
- 1/2 tsp Turmeric Powder haldi
- 1 tsp Coriander Powder dhania
- 1/2 tsp Cumin jeera, seeds
- 1.5 tsp Salt or to taste
Sauce & Oil
- 2 tbsp Mustard Oil or vegetable oil
- 2 tbsp Mustard Sauce

Preparation
- Wash and trim the okra. Finely chop the onion, tomato, and green chilies.
Sauté Aromatics
- Heat mustard oil in a pan. Add onion paste, ginger paste, garlic paste, turmeric powder, and red chili powder. Sauté until fragrant.
Add Vegetables and Spices
- Add the chopped onions and tomatoes. Stir well and cook for 2-3 minutes. Add the okra and salt. Mix well and let it shallow fry for a few minutes.
Simmer and Finish
- Cover the pan and cook for about 5 minutes, or until the okra is tender-crisp. Add cumin seeds and coriander powder. Mix well. Cover again for 1 minute.
Serve
- Stir in the mustard sauce. Garnish with fresh cilantro. Serve hot with rice or roti.
