Ingredients
For the Koftas

- 2 tbsp Oil
- 1 tsp Garlic finely chopped
- 2 tsp Ginger finely chopped
- 1/2 tsp Turmeric powder
- 1 tsp Chili Powder red
- 1 tsp Cumin Seeds
- 2 tsp Coriander powder
- 1 tsp Salt or to taste
- 2 tbsp Tomato Paste
- 1/2 cup Yogurt
- 1/2 tsp Spices (see spice blend), ground, whole
Spice Blend
- 1 tsp Cumin Seeds
- 2 tsp Coriander Seeds
Instructions
- Wash the green figs and roughly chop them. Boil the figs until softened. This helps create a smooth paste for the koftas. Once boiled, drain the figs and blend them into a smooth paste. Set aside.
- In a mixing bowl, combine the fig paste, Bengal gram flour, chopped green chilies, turmeric powder, salt, and half of the ground whole spices. Mix well to form a dough. The gram flour helps bind the koftas and gives them a pleasant texture.
- Heat oil in a frying pan over medium heat. Shape the fig mixture into small, round koftas. Shallow fry the koftas until golden brown and cooked through. This searing process adds flavor and helps the koftas hold their shape in the curry.
- In the same pan, add a little more oil if needed. Sauté the chopped ginger and garlic until fragrant and lightly browned. This builds the flavor base of the curry sauce.
