Instructions

Prepare the Dough

  • Combine whole wheat flour, rolled oats, asafoetida, salt, and oil in a large bowl. Gradually add water, mixing until a soft, pliable dough forms. Cover and let it rest for at least 15 minutes.

Make the Filling

  • Heat oil in a pan. Add cumin seeds and let them splutter. Stir in red chili powder and cook for a minute. Add thawed green peas and cook until heated through. Add the oats and water, and cook until the oats are tender but not mushy, approximately 3-5 minutes. Allow to cool completely.

Assemble and Bake

  • Divide the dough into small balls. Roll each ball into a thin circle. Place a spoonful of the cooled oat filling in the center. Fold the dough over to form a half-moon shape, pressing the edges firmly to seal. You can crimp the edges with a fork for a decorative finish.

Bake the Kachoris

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly grease it with oil. Arrange the kachoris on the baking sheet, leaving some space between each one. Bake for 12-15 minutes, flipping halfway through, until golden brown and cooked through. You can brush with a little extra oil during baking for a crispier exterior.

Serve

  • Serve the baked oats kachoris hot with your favorite accompaniments such as mint chutney, a side salad, or potato bhaji.

Recipe Notes

Expert Tips for Perfect Baked Oats Kachoris

  • For a richer flavor, toast the whole wheat flour and rolled oats in a dry pan before making the dough.
  • If your dough feels too sticky, add a little more flour. If it's too dry, add a teaspoon of water at a time.
  • Don't overcrowd the baking sheet; this will ensure even baking and crispy kachoris.
  • Experiment with different spices in the filling to create your own unique flavor combinations. Consider adding garam masala, turmeric, or ginger for added depth.
